Banana Bread

I got this recipe from my mom’s friend, Jill. They met at a potluck.  When Jill tasted the cookies my mom made she had to be friends with my mom.  Even after 14 years they are still good friends.  This is Jill’s Banana Bread:

Easy to make.  Instead of using sugar, i tried cocnut palm sugar (still 1 cup) and it worked great.  A healthier choice.

Makes one pan.

Ingredients:
2 large eggs, slightly beaten
1 cup mashed bananas (2 bananas)
1/2 cup melted butter, cooled
1 teas. vanilla
1 1/2 cups all-purpose flour
1 teas. baking soda
1 cup sugar
1 cup chocolate chips (tossed with 1 Tbls. of flour)
1/2 cup flaked coconut (optional)

1. Grease and flour pan. Preheat oven to 325°F.

2. Stir together in a bowl the eggs, mashed bananas, butter, and vanilla. Then, add the flour, baking soda, sugar, chocolate chips, and coconut if desired.

3. Pour batter into pan. Bake in the oven for 1 hour and 10 min. or until a toothpick comes out clean.  Place on wire rack. Once cooled, place wire rack ontop of pan and turn over.
