I have felt that as a baker I need to have a perfect round cupcake. When I go into or see a bakery with the perfect round cupcake tops, I cannot figure out how they do that! This is for the perfect chocolate cupcake.
I have already found a pretty good vanilla cupcake but not chocolate. Before, I have tried a chocolate sour cream recipe, which results in flat or sunken tops. This has never been my chocolate goal.
I just got a new cupcake cookbook, The Prairie Girl Cupcake Cookbook. I knew I wanted to get this book (mostly because the chocolate cupcakes had a nice rounded top). That same day, I tried the chocolate cupcake recipe. I followed the instructions to fill the cupcake liners to that top, which resulted in overflowing and big, flat tops.
Then I tried an Ina Garten chocolate cupcake recipe. However, I did not make the peanut butter frosting!!! These had somewhat round tops, but did not taste as good as the other recipe.
Not content, I tried the Prairie Girl recipe one more time. I knew that I could make the cupcakes to look like the pictures in the book. And I did . . . kinda. They did end up round, but a little uneven. However, I still think that it works! A few things to note:
- The second time I tried this recipe I baked the cupcakes 425°F.
- I filled the cupcake liners ¾-⅞ full.
The frostings that I used to decorate some of these cupcakes included a raspberry frosting (I don’t remember where I got it from), the Classic Vanilla Bean Icing and Chocolate Cream Cheese Icing from the Prairie Girl Cupcake Cookbook. The vanilla icing reminds me of a frosting I had from some cupcakes once. Loved it!
Furthermore, I got this other new cookbook, Sarabeth’s Bakery: From My Hands to Yours. I tried the Black Beauty Cupcakes, and they turned out amazing! This has been the best recipe yet! I tried the frosting design from the book, and they look really cute!
